We decided to evacuate from our house in light of the hurricane’s intensity. We packed up a few things and headed to Ocklawaha with two dogs. Michael was out of town but flying in. We got a head start and got down there in time to help Karen clear off the patio furniture.
After that was all done we had happy hour.
And then it was time for dinner. I volunteered to make pasta. This is another simple variation, this time with the addition of crushed red pepper.
Penne all’ arrabbiata (Angry Penne)
- 2 cloves garlic, minced (or squeezed through a garlic press)
- Crushed red pepper, to taste
- 3 tbsp extra-virgin olive oil
- 1 large can petite diced tomatoes (or fresh)
- Parsley
- Salt
Heat olive oil in a frying pan on medium heat. Add garlic and red pepper and sauté for 2 minutes. Add tomatoes and cook for 5 minutes.
Sprinkle parsley over pasta added to the sauce.
We didn’t have any parsley but it was still tasty!!

I am so hungry! Almost my lunch break but I don’t want what I packed for lunch, I want this! With a hearty heap of freshly grated Parmesan. Mmm. So, I shared that we aren’t big on tomatoes at my house, but am I correct in assuming that after cooking the can of diced tomatoes for a few minutes, they will turn to sauce? Bear with me, I was at the end of the line when they were doling out common sense. I do cook, although you probably can’t tell from my questions. This looks so good. Can you hear my tummy growling????

LOL!!! Well we had to eat and I had a blog post write! Plus it was the least I could do to pay my sister-in-law back for her hospitality.
