Last week, I shared a quick, easy meal using chicken sausage.
Last night I needed another easy meal so I made a variation of that dish. This time I used beer brats in place of the chicken sausage. It’s what I had in my freezer.
I love these kinds of meals because it’s a great way to use up what you have. And it can easily be a one-pot meal. Less fuss. Less mess.
Sausage Bowls
I started by slicing them into little rounds but ended up cutting them with kitchen scissors. It was easier to get through the casing without all the insides spilling out.
Then I fried them up in a little EVOO, careful not to crowd the cast iron pan.
I fried them in batches, removing them to a plate.
When all the meat was cooked, I added sliced onions to the pan with the sausage drippings.
Gave them a good stir and let them caramelize a bit.
Then, because I had them, I added a seeded and chopped jalapeno to add a bit of heat. Let that soften a bit before adding the next thing.
And some chopped asparagus, because, again, I had it and needed to use it up. I could easily have added other veggies such as chopped cabbage, broccoli or peppers.
After a few minutes, I added the sausage back in and gave everything a good stir. I tasted it and added just a bit of salt. Don’t you just love all the crunchy bits of sausage?! I do!
I must admit: it was tasty! Easy and yummy! A winner in my book!

That looks so good and so doable on a week night after work. I have never cooked asparagus but need to grow up and preparing it. Could make a meal out of that pan of grilled onions. YUM!
