Pacific Rim Pork with Sesame Noodle Salad {recipe}

I made a new recipe tonight that is a riff on a Cooking Light recipe. It was so good that I wanted to record it so I could make it again!

Pacific Rim Pork with Sesame Noodle Salad

Ingredients for Marinade

  • 2 Tbs minced fresh garlic
  • 3 Tbs soy sauce
  • 3 Tbs sherry
  • 3 Tbs hoisin sauce
  • 1 Tbs dark sesame oil
  • 1 tsp spicy mustard
  • 1 garlic clove, pressed
  • 2 pork tenderloins, trimmed and cut into 1/4″ slices

Directions for the meat

Combine all ingredients in a plastic container or zip-lock bag and marinate up to 2 hours. Heat a large frying pan then spray with non-stick spray. Remove pork from marinade and saute’ in batches. Return all cooked meat to the pan then pour marinade over and simmer for 5-10 minutes.

Ingredients for Noodle Salad:

  • 1 box whole wheat spaghetti
  • 1/4 cup diced red and yellow peppers
  • 1 cup shredded carrots
  • 3 sliced green onions
  • 1 package coleslaw mix
  • 1 Tbsp sesame seeds

Directions for Salad

Cook pasta in salted water til al dente. Drain and let cool. In the meantime, combine all the veggies in a large bowl and toss. Add spaghetti and dressing (see below) and using clean hands, mix everything thoroughly. Sprinkle with sesame seeds. Serve with the pork on the side.

Ingredients for dressing

  • 1/4 cup extra virgin olive oil
  • 1/4 cup rice vinegar
  • 1 Tbsp honey
  • 3 Tbsp sesame oil
  • 1 Tbsp soy sauce
  • 1 garlic clove, pressed

Yields approximately 8 servings.

  1. That looks amazing and is going on my list of recipes to try. I think we will try this next week, though I may try it with chicken thighs (have some in the freezer. . .).
