Menu Monday

Today I’m sharing our Christmas Bucket List over on The Blended Blog! Be sure to check it out. 


Last week, we deviated from the plan quite a bit which is the frustrating part of making a menu – when I don’t stick to it.

Monday – the Pork Satay with peanut noodles from the previous week. Tasty although I probably overcooked the pork. Michael is the grill master and he wasn’t around.

Tuesday – the chicken with lime sauce from the previous week. Still haven’t made this. Instead, I made the pasta that was scheduled for tomorrow.

Wednesday – pasta with freezer sauce since Michael’s out of town. Since I had made this the previous day, I thawed out ribs but Annie ended up making a yummy Thai dish that she had found.

Thursday – Pollo Rancho Luna. No. Since I had thawed out the ribs we had that. And then we announced Kib’s Bay. It was a mad scramble to get packed up and head out.

Friday – TBD. I knew that we’d be out of town, but on the off chance that my kids might read my blog post, I purposefully neglected to mention that we’d be EATING DINNER IN ORLANDO!!


Here’s this week’s plan. :

Monday – Pizza. I have soughdough in the fridge that needs to be used.

Tuesday – Asian-Glazed Chicken Thighs with spinach salad.

Wednesday – Turkey Caldo Tlalpeno (I made turkey on Sunday so now I have a carcass! Yay!)

Thursday – Lechon Asado, black beans and rice

Friday – Swedish meatballs and roasted veggies
