Menu Monday

It’s a new year which means that the holidays are behind us and the resolutions have begun! I’m participating in the health challenge and I find the best way  to eat well is to plan ahead.

Here’s the menu for the week:

Monday: stir fry (use up leftover chicken, pork and rice) .

Tuesday: tacos with low carb tortillas

Wednesday: pasta and peas (I don’t think I ever shared that recipe with you! Mental note to take pictures…)

Thursday: pulled pork and coleslaw

Friday: steak and baked sweet potatoes, salad

Simple but it works. What are you cooking this week?

  1. So funny about the Pasta and peas, I had given my son pasta and peas for dinner the other night (separate on the plate) and told him that some dishes combined those two things together and he looked at me like i had two heads 🙂 Looking forward to seeing it/recipe so I can show him, hehe.

  2. We had pulled pork Sunday. Planning on chicken stir-fry for tonight. Not sure for the rest of the week. Getting my menu plans done hasn’t happened yet. Soon, I hope.
