Thanks to a challenge over at Eat At Home, I have been better about planning a weekly menu. If you are needing some ideas, here’s what my menu looks like for this week. I’m only planning Monday through Friday as we often go out on the weekend.
Monday – Buffalo wings, Indian Spiced Okra
Tuesday – Spicy Thai Basil Chicken
Wednesday – Curried Beef Short Ribs
Thursday – Meyer Lemon chicken piccata, sauteed brussels sprouts and shallots
Friday – Beer Braised Pork Ribs (no link or photo for this one)
I’m trying out some new recipes this week. If I had a link available, I gave it to you. What do you have planned for this week, menu-wise? I could use some new ideas!

Making. We’ve started grilling them rather than frying and then tossing with the sauce.

Thanks for the links! I’m always looking for new recipes, and trying to get back to meal planning ahead of time. Usually I end up staring into the fridge at 4pm trying to figure out what to make!

So excited to see your post! I signed up for the challenge, too. That’s all I did. Sign up. Now maybe with your great lead, I can get my behind busy making some of the recipes. Everything looks delish. Especially the Thai chicken and the lemon piccata chick. I am a chick kinda chick! Did the recipes take long to prepare? Now that I am working some again, I need some good quickies or good crockpot meals. Just like Michael Ann said above, I have to get back to planning my meals in advance. That’s half the battle.
I haven’t prepared them yet! That’s my menu for this week! I’ll let you know how it goes.
Good for you for meal planning! It’s the only way I can function during the week–i have to have a plan! So far this week, we’ve done a quick Orzo soup with turkey sausage, Breakfast for Dinner (my kids FAVE) and good old turkey sloppy joes 🙂 XOXO
Sometimes my plans get derailed…like last night we had an early meeting at church…but for the most part it’s been great! My kids love breakfast for dinner too. Me…not so much…
