Do you have a Pollo Tropical where you live? In case you are not familiar with it, it is a fast food restaurant with a tropical twist. When we lived in Tampa, we often ate at little Cuban restaurants where they served the most delicious roast pork, black beans and rice (white or yellow), and my absolute favorite: fried plantains.
Then we moved to Jacksonville and there were no Cuban restaurants. Actually there was one and we tried it once but didn’t love it. About 7 years ago, I was working a homeschool convention in South Florida and we introduced the kids to Cuban food via Pollo Tropical. They loved it. We would stop in whenever we travelled south. A couple of years ago we finally got two Pollo Tropical restaurants in Jacksonville and we frequent them on a somewhat regular basis.
We are on a road trip to visit Florida Atlantic University in Boca Raton. We stopped off for dinner and my vote was for PT. I got my usual: a Tropichop. It’s like a Tex Mex burrito bowl or Chinese rice bowl but with that Cuban touch. I like mine with half lettuce, half brown rice, mojo roast pork, chopped tomatoes, black beans and sautéed onions. I pour the spicy poyo poyo sauce on top to give it that extra kick. And I *always* have a side of fried plantains. It’s soooo good!
