It’s Thirsty Thursday around these parts. That means $1 wine or beer and $2 slices of cheese pizza at Al’s Pizza ($1 after 8:00). Sometimes, when the day is busy and there’s no time, it’s nice to let someone else do the cooking.
Although we like to go to Al’s Pizza on Thursdays, growing up, Friday night was pizza night at “Shorty’s Pizza” (the waiter was REALLY short! That’s what we called our favorite pizza join in Italy.) We still like to have pizza night at our house. Usually, I make it. It’s really not hard at all, using a no-knead recipe. I’ve even made it in just over 30 minutes!


I like to make the dough days in advance, keeping it in the fridge. It breaks down the gluten and sours it. It’s better for you that way. I take it out the morning I want to make the pizza, letting it come to room temperature on the counter. Would you like to make your own homemade pizza?
